I just purchased a Soltek k8t890 mobo. It supports dual channel ddr memory. I purchased 2 identical 512mb sticks of pc3200 ram as well. Now, my dilema.... Am I gonna see better system performance splitting up the ram and running 512mb in dual channel mode, or going single channel mode and running 1gb of ram. I do alot of video editing and picture editing, some gaming.

Hmm, well just to put you mind at ease, it does make a difference running in dual-channel mode rather then single-channel mode 
Also note that running in single/dual-channel modes does not effect the total physical memory allocation at all. It just has the added beneifit of allowing the MMU to map memory with either 64-bit(single) or 128-bit(dual) addressing. Basically it means that now the memory can be accessed with a 128 lanes of traffic vs. only 64 lanes of traffic
