The simplest way...Use CDex

Another way, although a bit more involved, use EAC (?) audiograbber i believe its called....(cant really recall....looking into it....damn meds)

EAC - Exact Audio Copy
Use that to rip from CD


Then use LAME to encode them into mp3 files.

Its a two step process, I know, but the quality is unreal. For WAVE to MP3 Lame has a really good variable encoder

1) Exact Audio Copy (EAC) to rip the cds.
2) LAME (set to variable bit rate, with a minimum of 192kbps).

The fidelity is very good, even on home hi-fi's.

It takes an around of 2.5 minutes for a 5 minute track; there are faster solutions around, like Audiograbber and Audiocatalyst, but that's just what i use.

RIPPING:
AudioCatalyst 2.1
CDex

ENCODING:
AudioCatalyst 2.1
Lame

and (for ripping DVD's):

RIPPING:
SmartRipper
CladDVD XP

ENCODING:
FlaskMPEG

I've always used MusicMatch. But I think I'm gonna give EAC and LAME, cuz it sounds like they kick butt. :-)
